abstract | The invention relates to a method and a composition for inhibiting the growth of Salmonella. The effective composition of the invention is a composition which ferments using a microflora other than Salmonella at a speed comparatively higher than that of Salmonella or which is fermented by a microflora other than Salmonella to produce metabolites which inhibit the growth of Salmonella. In one embodiment of the present invention, the effective composition is a class of fructo-oligosaccharides which inhibit the growth of Salmonella. More particularly, fructo-oligosaccharides are sucrose molecules having between 1 and 8 residues of fructose. This class of sugars is represented by the example of "Neosugar" which includes 1-kestose, nystose and 1-fructofuranosyl-nystose. The method of the invention consists in bringing Salmonella into contact with the effective composition and can be given as food to a domestic animal. The present invention relates to the effective component and the nutritious food. |
