Compounds of general formula (I) or (II), where R is a substituted or unsubstituted alkyl group having 3-23 carbon atoms and R1 is hydrogen or a substituted or unsubstituted, linear or branched chain of hydrocarbons aliphatic or aromatic, saturated or unsaturated, are prepared by reacting a compound of general formula (II) where R2 is H or an alkyl group having 1-6 carbon atoms and R is as defined above, with a compound of general formula (IV) where R is as defined above, in the presence of an enzyme capable of catalyzing the formation of amide bonds, in particular a lipase. The amide group present in the compound (I) can be extracted using a second enzyme which can cleave amide bonds, for example, a carboxypeptidase, thus making the compound (II). |
