abstract To simultaneously control cleaning and hygiene, especially in the food industry and in hospitals, an aqueous solution of an optionally fluorescent dye or a combination of such dyes that bind to organic materials, including the microorganisms, by coloring them, is applied to the surfaces to be cleaned. Any organic contamination of the surfaces, if any, will be manifested by said coloring. Among the dyes which can be used, the disodium salt 2,4,5,7-tetraiodofluorescein is preferred. The disadvantages of known methods of controlling the level of hygiene in workplaces and in institutions are thus avoided, in particular a delay of up to 4 days made necessary by the need to incubate the extracted samples beforehand. The present invention makes it possible to obtain immediate information concerning the hygienic state of the places to be cleaned.
