abstract Sugar composition composed of 90 to 99% by weight of sugar, and 10 to 1% by weight of a non-gelling dietary fiber, soluble in water. Said sugar composition roughly has the properties of normal sugar, but contains a significant amount of dietary fiber having beneficial health effects. A new type of soluble fiber derived from sugar beet has been developed, as well as its preparation process. Said composition may take the form of a concentrate or a syrup, or may be in particulate form. Said particulate form can be used as a sugar substitute. The fiber used can be a new fiber obtained by treating sugar beet with water free from chemical reagents, at ambient pressure and at an elevated temperature, for example between 95 and 98 ° C.
