abstract |
A process has been developed for the production of a new food product based on cereal grains. This new food product has a high fiber and protein content, and has a coating of complex sugars which gives the product good taste and makes it suitable for human consumption. This process involves the transformation and enzymatic elimination of starch from the grain. The processed grain is separated from its liquor before the latter is fermented to produce ethanol. Said food product can be incorporated into cooked products, beverages, breakfast cereals and the like or consumed "as is". |
