abstract |
The polysaccharide arabane is extracted from sugar beet by a further modification of the known alkaline extraction process in which, after neutralization of the alkaline liquor, the liquor is subjected to ultrafiltration and the retentate is dried to obtain dry araban. The araban, obtained by the above method or by another method, is incubated with alpha-L-arabinofuranosidase to allow the cleavage of most or all of the branches of the araban. The araban, the ramifications of which have been removed, forms an aqueous gel which has the characteristics of a fat mimetic and can be used as a fat substitute in food products. A new substance is the isolated arabane which has had its ramifications removed and which is derived from the raw sugar beet araban. The araban itself can be used in new applications of emulsification and encapsulation of oils, for example aromatic oils. |
