The invention relates to a branching enzyme of microbial origin, which is isolated from bacteria producing the enzyme. Said bacteria may be bacteria resulting from genetic engineering. The invention covers recombinant nucleic acids encoding such a branching enzyme. Preferably, the branching enzyme is derived from Bacillus stearothermophilus . The enzyme may be used for modifying amylaceous substances, for example in a method for preparing human or animal foods. |
