abstract | A device for processing meat or meat products with liquids, in particular brine, comprises a container (1), in which the goods to be treated are stacked on a bottom grid (13). Above the bottom grid is a receiving space (19) for the processing liquid and for the juice expressed by the self-weight of the piled up goods. The mixture of juice and treatment liquid is pumped upwards with a pump (22) by a line (21) and from above re-sprinkled on the goods by a sprinkler device (32) supported by the cover (5) of the container (1). In this way an improved penetration of the treatment liquid into the goods is obtained, accompanied by a shortening of the treatment time. |
