This invention provides a method for the production of sugar compounds from glucose and sugar alcohols in the presence of α-glucosidase. According to this method, inexpensive raw materials such as sorbitol, mannitol, erythritol, xylitol or inositol can be used as the sugar alcohol together with glucose, thereby giving corresponding α-D-glucopyranosyl-1,6-sorbitol, α-D-glucopyranosyl-1,6-mannitol, α-D-glucopyranosyl-erythritol, α-D-glucopyranosylxylitol or α-D-glucopyranosylinositol each readily in a high yield. |
