abstract The invention provides a process for subjecting an aqueous solution of a HCl-hydrolysed protein to gel permeation chromatography using a porous material having an equivalent pore diameter between 0.5 and 2.0 nanometers and eluting a fraction which is free from detectable amounts of chloropropanols whilst retaining at least 40% of the sodium chloride. nPreferably the above permeation technique is combined with a steam distillation step which follows the gel permeation step.
