Process for obtaining crispy foods based on fruits or vegetables, characterized in that it consists in squeezing or hollowing out the fruits or vegetables to remove the central part or core, in cutting said fruits or vegetables into rings or quarters according to the configuration of the final product to be obtained, then to run them continuously in a heating and drying assembly comprising an alternation of heating and cooling zones, and finally to bag the product thus obtained. |
