abstract A process for preparing D-alanine, which comprises culturing a particular yeast belonging to any of the genera Candida, Saccharomycopsis, Pichia, Torulopsis, Cryptococcus, Hansenula or Trichosporon and capable of digesting L-alanine and substantially not digesting D-alanine under acidic conditions using a medium containing DL-alanine as a substantially sole carbon and nitrogen source. This process permits supply of a high concentration of DL-alanine to the medium and enables D-alanine to be obtained efficiently in a high yield in a short time. After the completion of the culture, the medium contains scarcely any other organic by-products and organic impurities, thus facilitating isolation and purification of D-alanine.
