abstract The invention relates to a process for producing an enzyme of the β-glucuronidase type comprising the culture of a microorganism, carried out in a medium comprising at least one carbon source and one nitrogen source, and the extraction and purification of the enzyme from the biomass and / or the culture medium.n n n According to the invention, the enzyme is produced by the culture of a microorganism of the Aspergillus type or of its variants and mutants.n n n The invention also relates to a process for the hydrolysis of a solution of glycyrrhizin or plant extracts containing it and containing or not containing up to 20% by volume of ethyl alcohol.n n n The invention also relates to a process for producing 18 β-glycyrrhetinic acid, in which glycyrrhizin or a plant extract containing it is hydrolyzed.n n n The invention also relates to a licorice extract, whether or not containing ethyl alcohol, which has a reduced or zero glycyrrhizin content obtained by the hydrolysis of glycyrrhyzin and the elimination of the 18 β glycyrrhetinic acid formed.
