abstract | To extract fruit or vegetable juice, the raw material is first ground in a mill (1), then passed through a colander (2) and into a membrane filter (4). A fluidization stage (3) is provided before the membrane filter (4). In this stage, the raw material is physically and enzymatically fluidized only to the extent that a large part of the wort can be brought to the membrane filter (4). The main decomposition of cells is produced in the residue of the membrane filter (4) by a device (5) placed at the rear, for chemical and physical cell decomposition. |
