N-acylated amino acid esters of the type are used to prepare amino acid esters from N-acylated amino acid esters wherein R ', R "and R'" are any, at least partially identical or different aliphatic, aromatic, araliphatic or heteroaromatic, substituted or unsubstituted radicals, anhydrous with a starch and an alcohol. An alcohol R 'OH corresponding to the ester alcohol is used. A mineral acid, an ion exchanger or a Lewis acid can serve as the acid. |
