abstract A process for the production of vanillin comprises extracting a fluid mixture containing vanillin and water with carbon dioxide at a temperature between 0o and 110oC and under a pressure between 30 and 400 bar, followed by the separation of vanillin. According to this process, the carbon dioxide containing vanillin is passed at the temperature and under the extraction pressure through an aqueous solution of sulphite or hydrogen sulphite, this solution is then acidified with sulfuric acid. down to a pH between 2 and 4, the vanillin-free carbon dioxide being returned to the extraction step.
