abstract It was previously thought that brewers' yeast, n Saccharomyces cerevisiae , was incapable of nemploying mannitol or sorbitol as a source of ncarbon during propagation in a catabolite nderepressive mode. The invention is based on the ndiscovery that many strains of S. cerevisiae can in nfact employ mannitol and/or sorbitol in this way. nSimple tests reveal those strains that are suitable. nPositive action is preferably taken to introduce oxygen nduring propagation. A yeast extract or other undefined ngrowth medium may need to be present. Yeast propagated nin this manner may be used for the fermentation of nfermentable carbohydrates in an aqueous medium, and in nparticular may be used for brewing beer or for making nwine.
