abstract The method according to the invention consists in introducing the seeds into a huller (1), in dividing the particles leaving the huller into two fractions of different particle size, these particles being constituted by whole or broken almonds, seeds partially or unhulled, broken shells and fine almonds, to send the fraction of higher particle size on a fluidized bed (11) to extract the broken shells, and to introduce the fraction of smaller particle size into the fraction of higher particle size leaving without shells of the bed fluidized.n n n As for the installation, it essentially comprises a huller (1), a sorter (4) comprising a rotary drum (5) with a perforated side wall (6), and a fluidized bed (11).n n n To obtain oil cake with protein content of the order of 40 to 45%.
