Novel, microbial α-galactosidase products which herein are designated a-galactomannangalactosidase, are able to split off D-galactopyranosyl groups from galactomannans without simultaneous degradation of the mannan backbone. The enzyme products can, for example, be prepared by Penicillium species. n The novel enzyme products can be used even when the galactomannans are in a relatively high-concentration solution. Using the novel enzyme products, it is possible to prepare galactomannans having desired gelling capacities. |
