abstract | A method of stabilizing the activity of an extract of the New Zealand green lipped mussel (Perna canaliculus), comprises adding at least one organic acid or an alkali metal or alkaline earth metal salt thereof to the extract. Preferred organic acids are organic aliphatic acids having from 1 to 10 carbon atoms, particularly tartaric acid. Also disclosed is a food supplement and/or pharmaceutical preparation which comprises an extract of the New Zealand green lipped mussel (Perna canaliculus), and at least one organic acid or an alkali metal or alkaline earth metal salt thereof. |
