abstract The invention relates to a process for the production of active dry yeast with improved stability, in which an aqueous suspension of yeast cells is mixed before the drying process with an aqueous emulsion of a protective additive which contains an edible fat with an iodine number of at most 10, a citric acid ester of edible fatty acid mono- and / or diglycerides, a diacetylacetic acid ester of edible fatty acid monoglycerides and optionally 1 to 3 further constituents from the group of sulfosuccinic acid diesters, butylated hydroxytoluene and / or sorbitan monostearate. The additive is preferably added in an amount of 0.5 to 2% by weight, based on the dry yeast substance.
