abstract A method of cultivating in milk, organisms having a slow growth capacity, an organism produced according to the method and an edible milk product containing such organisms produced according to the invention. In executing the method a bulk starter culture is prepared by cultivating bacteria, for instance bacteria of the strain Lactobacillus acidophilus or any species of Bifidobacteria like adolescentis, breve, longum or infantis, or slow growing species of Streptococcus, whereby milk having an additive of growth stimulants is UHT (ultra high temperature) treated and is cooled to an optimum growth temperature for the bacterial culture and is inoculated with the bacterial culture, whereafter the culture is allowed to grow until the bacterial count is more than 10<8> per ml. Parallelly thereto, a milk medium containing growth stimulants and possibly an additive of proteins is prepared in a carefully cleaned and disinfected container, and the milk mixture is UHT treated and cooled to optimum growth temperature for the bacterial culture, whereupon the process milk batch is inoculated with bulk starter culture in growth phase in an amount of 2,5-25% or preferably 5-20%. The culture is allowed to grow at optimum temperature until the bacterial count is more than 10<8> per ml, whereupon the process is broken and the product is cooled and packed.
