abstract | A process for the enzymatic removal of free amines from foodstuffs and, in particular, to the use of amine oxidase enzymes for effecting such removal. Foodstuffs which have high free amine content include chocolate, cheese, especially mature cheese, salami, wine and yeast extracts. Suitable amine oxidase enzymes include mono-amine oxidase and di-amine oxidase, in particular di-amine oxidase obtained from the Aspergillus niger organisms. |
