The present invention relates to a process for the preparation and thermal treatment of food products and apparatus for its implementation.n n n The method according to the invention is characterized in that the mixing and heat treatment operations are carried out simultaneously by pressure injection of the concentrate and at least part of the liquid of constitution superheated at a temperature above about 100 ° C. , in a closed tubular enclosure in order to avoid any vaporization of the liquid of constitution; the apparatus for implementing the method according to the invention comprises a tubular mixing enclosure (20) connected on the one hand to a metering pump (16) delivering the concentrate withdrawn from at least one storage tank (10) , and secondly a generator (24) of superheated constitution liquid. |
