The method ncomprises - n(1) adding a milk sample to a preheated aqueous nsubstrate/buffer solution comprising a substrate having the nformula n nand an acid/anion buffer, n(2) incubating the mixture for a suitable period then nstopping the reaction, n(3) conducting a colorimetric comparison between nsample and standard. n The invention also includes a test kit for carrying out the nmethod.
