A process for the preparation of ascorbic acid is described, which consists in reacting a lower alkyl ester of 2-ketoguionic acid with an amine having 12 to 38 carbon atoms in a suitable organic solvent and then cleaving the ascorbic acid amine acid obtained without neutralization. |
