A flavour composite is prepared from xylitol and a flavour material, by melting the xylitol, heating the resulting melt, thereafter cooling the melt and, under turbulent conditions, adding the flavour. The xylitol forms a crystalline lattice that retains the flavour and. in addition to increasing flavour shelf life, enhances flavour sensation by offering a cooling taste effect. The present flavour composite may be prepared as sugar-free candies, or may be reduced to particle sizes appropriate for incorporation into comestible products such as chewing gums, and may be utilized either alone or in combination with the same or different flavours in alternative forms. |
