abstract A process of ixomerization of lutein to zeaxanthin is described which includes a step of saponification or alkali treatment of a plant extract containing lutein, followed by a step of heating under controlled conditions is carried out in the presence of a surfactant having a hydrophilic-lipophilic balance from 1 to 40 as a catalyst for the reaction of Lutein to Zexanthin isomerization at a temperature of 70 to 140 C, obtaining a reaction product with high concentrations of zeaxanthin up to 80% with respect to the total carotenoids.
