abstract The invention comprises a process for producing a chitosan derivative, and a product prepared therewith, by activating chitosan or a chitin as a precursor of chitosan in alcohol containing water in an amount ranging from 0% to a maximum of about 30 % and prepare derivatives by reaction with a reagent to obtain derivatives that have various uses, including use as antimicrobicides, microbiostatics, antiperspirants, antifungals, or fruit preservatives, or as carriers of active molecules or functional groups etc., or a combination thereof. The derivatives illustrated include acid derivatives, succinic, deacetylated at the enzymatic level, hydrolysed at the enzymatic level, sugar, formaldehyde, phosphoric acid, hydrochloric acid and copper sulfate which are obtained by individual reaction or in combination with consecutive reactions. A novel class of thermostable proteo chitinase prepared from Aspergillus niger MTCC 5572 having a molecular weight on SDS-PAGE of approximately 50 kD and optimal hydrolytic activity at pH 2 and 80 ° C is also revealed. Compositions for treatments of natural products and methods for delaying aging, improving shelf life and retarding the microbiological rot of bananas and other fruits are also disclosed.
