abstract The invention relates to a bioactive food product method for preparing a complex bioactive food product and method for disease control using quorum prebiotics and inhibitors such as inhibitory furanones and other bioactive compounds, including both in the continuous phases as disperses of a complex bioactive food product. The product consists of an emulsion of solids and oil or oil in solids forming a first emulsion, which emulsifies itself within a polymer to form a complex of emulsions oil in polymer or solids in polymer. The bioactive complex is formed by two emulsions where the first emulsion comprises a dispersed phase and a hydrocolloid polymer that functions as the continuous phase. The second emulsion of the complex is then crosslinked to form a physically stable matrix. The food bioactive complex or the first emulsion of the food bioactive complex then serves to administer different bioactive components, including prebiotic bacteria and quorum detection inhibitor molecules in the digestive tract and in the environment of animals such as crustaceans / mollusks or fish or other molluscs or fish or other commercially cultivable ichthyological resources in order to effectively control bacterial diseases thanks to a novel combination of mechanisms including: competitive exclusion, direct inhibition of processes regulated by lactone homoserine and (acyl) lactone Homoserine typical of pathogenic bacteria. Consequently, the prevention and effective control of the disease is carried out through the supply of the novel combination and the use of prebiotic bacteria and quorum inhibiting furanones.
