This invention relates to methods for preparing a beverage containing at least 2 g / l of β-glucan, wherein said β-glucans have an average molecular weight ranging from 80 to 200 kDa. These methods include mashing of barley grains containing at least 10% β-glucans, having a DP3 / DP4 ratio in the specified β-glucan equal to at least 3, with α-amylase activity and endo-1,3 activity (4) β-glucanase. Drinks have a viscosity that provides a pleasant mouth feel, while at the same time they contain β-glucans that help lower LDL cholesterol levels. These drinks are generally stable and can be stored for months at room temperature without significantly reducing the β-glucan content. |
