abstract The present invention relates to a bacterial strain of Lactobacillus casei IPLA12038 with the registration number SEST 8590 and its use for the destruction of gluten, gliadin or peptide derivatives. The specified strain was isolated from sour dough used in the preparation of bread. The advantages of this strain include the ability to use gliadin as a nitrogen source, the presence of different types of peptidase activity associated with the destruction of the indicated peptide, and the ability to completely destroy the immunotoxic peptide containing 33 amino acids involved in the initiation of celiac disease for a short period of time. The fact that this microorganism is considered as GRAS and QPS is isolated from fermented food, is sensitive to antimicrobial agents of the gastrointestinal tract and is resistant to conditions in the gastrointestinal tract studied in vitro, ensures its use as a probiotic or nutraceutical .
