abstract Describes a method for producing thermally inhibited starch, in particular thermally inhibited non-pregelatinized granular starch, providing a viscous stable starch product. The method includes obtaining an alkaline starch, in particular an alkaline non-pregelatinized granular starch having a pH of at least 8; hydrothermal treatment of starch, in particular to obtain a hydrothermally treated non-pregelatinized granular starch, where said treatment is carried out at a temperature of 45-200C using steam at a pressure of 0.1-15 bar or a gas mixture containing water vapor at a partial pressure of 0.1-15 bar; dehydration of starch, in particular hydrothermally treated non-pregelatinized granular starch, to a moisture content of 2 wt% or less; and heat treatment of the starch by heating it to a temperature of 120-190C to achieve viscosity stability, cooling and optionally further processing of the starch.
