| abstract |
The invention relates to the composition of the edible coating, in particular to the composition of the edible coating, designed to provide moisture resistance. A composition containing a complex compound of chitosan and salts of fatty acids C-C, provides a hydrophobic coating of food products baked from dough. In particular, when at least one inner surface of the ice cream cone includes the claimed edible coating composition, this increases the shelf life during which the cone retains its crispness and has improved moisture resistance even under variable temperature conditions. |
