abstract | The present invention is directed to a method for isolating native protein from flour or oilseed meal, which involves extracting flour or meal with water to obtain an aqueous solution, concentrating the aqueous solution to a concentrated aqueous solution containing from 5 to 30 wt.% Protein, adding a water-soluble solvent to concentrated aqueous solution to obtain a protein precipitate; wherein the water-soluble solvent is ethanol, which is added at a final concentration of from 60 to 80% by volume, and separating the protein precipitate from the aqueous fraction. The invention is also directed to an isolated native protein of oilseeds obtained by the proposed method, which has a protein content of at least 80% by weight (dry matter), ethanol content less than 0.2% by weight (dry matter content), ethanol content more than 0.001 wt.% (dry matter) and the content of phenolic compounds less than 0.1 wt.% (dry matter), expressed in equivalents of mustard acid. |
