abstract The invention relates to a method for producing tea products from green leaf tea, the method includes the steps of obtaining a fresh tea leaf containing catechins and active endogenous enzymes; grinding fresh tea leaves containing active endogenous enzymes under aerobic conditions, sufficient to cause significant damage to the leaf; inactivating endogenous enzymes in a crushed fresh tea leaf to substantially prevent the fermentation of the fresh leaf; drying the crushed fresh tea leaves to obtain a tea product from green leaf tea.
