Crushed and defatted oilseeds are extracted with water at neutral, moderately alkaline or moderately acidic pH and filtered. The filtration tool allows small fragments of cellular material to pass into the filtrate. The filtrate is treated with alkali to raise the pH above 9 and the solids are separated. Proteins are separated from other components of the liquid and concentrated, for example, by induction heating or isoelectric precipitation and / or ultrafiltration. The remaining liquid is enriched in sugars. The method provides one or more protein products suitable as food ingredients for humans or animal feed or cosmetic products, and a sugar-rich product suitable for fermentation or as a food ingredient, and a fiber-protein ingredient in animal feed. |
