abstract The procedure is carried out by a machine with a number of working posts performing a series of stages. In the first stage (I) each head (TS) is gripped by its stalk (Q) using a clamp (2) on a support (1). In a second stage (II) the outer leaves (FE) are cut at the base; in a third (III) the outer leaves are cut round the middle, and in a fourth (IV) they are removed. In a fifth stage (V) the stalk is cut away from the head, leaving the head, whole or cut into sections, ready for use. The stages use a variety of cutting, suction and blowing operations.
