For the propagation of yeast, a given vol. of wort is inserted into a fermentation container with a given vol. of yeast, and the mixt. is taken from the bottom at time intervals to be returned to the top of the container. When there is a required deg. of cloudiness, further wort material is added, and the process is repeated until the container is filled with a given amt.Also claimed is an assembly with a fermentation container, a wort feed, a vaccination connection, an upper feed and a lower outlet. The recirculation system has a pump, a connection between the outlet and pump, and a connection between the pump and the upper feed.Pref. the amt. of yeast added is about 1 litre to max. 3 litres of pure yeast culture. During mixing, the material is passed through a cloudiness monitor (13), and oxygen is added during mixing. |
