abstract Paracoccus strains from ground samples, after culture on dimethyl amine or trimethyl amine-containing nutrients, yield a highly selective dimethyl amine dehydrogenase or trimethyl amine dehydrogenase, two enzymes which are eminently suitable for assessing the freshness of fresh or frozen fish. The reaction takes place in the presence of phenazinetho or methosulphate as the electron acceptor and can be performed and photometrically monitored in the presence of dichlorophenolindophenol. The selective DMA or TMA dosage is suitable for analysis in the field of foodstuffs and diagnosis. A particularly effective Paracoccus strain was deposited under number DSM 6512.
