abstract The invention relates to a process and appts. for continuous measurement of the strength breakdown and sugar content for mashes using an iodine concentration reaction. During the process a defined volumetric stream of the mash is continuously extracted and mixed at a given ratio with an iodine solution. Strength is measured in the mixing phase after cooling the componentse. Appts. comprises a test tube through which mash is pumped and a separate tube through which iodine soln. is pumped. Both tubes feed a mixing chamber and the mixture subsequently passes through a measuring tube with a transparent section across which an optical signal passes. A processor is connected to the signal producing device. USE/ADVANTAGE - The process and appts. are used in beer manufacture and continuously measures strength breakdown and sugar content of mashes.
