abstract | Disclosed is a method of preparing monoglycerides which are substantially free of di- and triglycerides. In this method, glycerine is reacted with a fatty acid in the presence of lipase with the aim of obtaining largely diglyceride-free monoglycerides even when the yield of acid is high. This is achieved by virtue of the fact that monocarboxylic acids with 12-24 C-atoms which are solid under the conditions of the reaction are suspended in the form of powder with a specific surface area of more than 0.5 m<2>/cm<3> in a molar excess of glycerine and allowed to react in the presence of a monoglyceride lipase to more than 80 % of the theoretical yield relative to the monocarboxylic acid. |
