abstract The process for the fractionation of neutral protein hydrolysates by ion exclusion chromatography provides for the protein hydrolysate being neutralised with magnesium or calcium salts and subsequently chromatographed on a cation exchanger in the magnesium or calcium form. The abovementioned process results in protein hydrolysates which are low in sodium chloride or free of sodium and have particular flavour properties for the production of foodstuffs.
