abstract | Process for purifying fruit brandies and spirits, in which the cyanide in the alcoholic distillate is separated off as completely as possible by chemically binding with electrolytes, and as a result formation of ethyl carbamate in the ready-to-drink spirit is prevented. Cyanide is separated off in the distillate as poorly-soluble silver cyanide, by addition of either a stoichiometrically calculated amount of silver sulphate solution or silver nitrate solution, a silver excess present being coprecipitated as silver chloride by addition of chloride, so that the distillate, after filtration, has cyanide ion and silver ion contents of below 0.1 mg/l and forms at the most technically unavoidable amounts of ethyl carbamate (below 0.4 mg/l). Cyanide is also separated off from alcoholic distillates by contact with electrolytes in the form of anion exchangers in the batch or continuous flow process. Separating off the cyanide is either carried out in distillates which must be distilled once more or in distillates in which a further purification by distillation is not necessary. |
