abstract | (1). New crystalline alpha-maltose, (A), contains at least 55 wt.% w.r.t. dry solids, of alpha-maltose isomer and has a residual content of beta-maltose isomer. (A) has a main diffraction angles (2 theta) 12.6, 20.3 and 21.9 deg., in the X-ray diffraction analysis with CuK alpha-rays. (2). In the prepn. of (A), (a) a highly conc. syrup contg. less than 10 (2-9) wt.% moisture is prepd. from highly pure maltose contg. at least 85 wt.% maltose, w.r.t. dry solids. (b) The alpha-maltose is crystallised from the syrup at 50-130 deg.C in the presence of crystal nuclei and (c) the (A) formed is recovered. (3) The use of a cation exchanger resin in a fractionation step is claimed. (A) are also useful in the mfr. of ready-to-use prods. for parenteral feeding, e.g. by injection, incubation or haemodialysis. These prods. contain at least one additional foodstuff, e.g. a saccharide, protein, aminoacid, oil, fat, vitamin and/or minerals and are present in finely-distributed form. (A) May be used in cosmetic compsns., tobacco and pharmaceuticals and in animal feedstuffs. The alpha-maltose is obtd. in finely-divided form, has degree of colouring below 1 and can be introduced into foodstuffs without dissolving. (A) Have a high affinity to oils and fats, a mild sweetness and resist storage in a closed container. Pref. crystallisation takes place under high pressure, with dehydration and may be followed by an ageing step. |
