The invention relates to the use of edible collagen flat films for the production of smoked foods, in particular fish products and ham. By covering the cut muscle surfaces of the material to be smoked, such as salmon halves or hams, these sensitive surfaces are protected against contamination by dust and bacteria and, moreover, are made smooth. In the production of cooked ham, which is conventionally cooked in a compact form in an elastic net, surprisingly, the collagen film does not adhere to the net during the cooking or smoking process and can easily be removed after cooling. |
