abstract A process for the production of a hop preparation. The process is characterised in that it succeeds without addition of organic solvents. In this process an aqueous reducing solution is added to a crude hop extract and the resulting mixture is heated. Acidifying the reaction mixture forms an aqueous phase and an organic phase. The temperature of the reaction mixture is then adjusted so that the separation of the aqueous phase from the organic phase is facilitated, after which the individual phases are isolated. The water-soluble fraction is suitable for the preparation of an anactinic malt beverage, while the water-insoluble fraction can be used as an anactinic brewing copper additive.
