abstract | (1) Substd. pyrazines having formula (I) (where R2, R3 and R6 are opt. different, linear or branched, satd. or unsatd. alkyl; or 1 substit. is H while the others are alkyl; R and R' each is linear or branched, satd. or unsatd. alkyl, or (i) 1 substit. is H while the other is alkyl, or (ii) 1 substit. is H and the other is opt. substd. aryl, an araliphatic or furyl gp. or a gp. having formula (A) or (iii) R and R' together form an alkylene gp.) are prepd. by adding a carbonyl cpd. having formula R-CO-R' (II) on to a dihydropyrazine having formula (III), in the presence of a basic agent. (2) Bicyclic pyrazines having formula (IV) (where the dotted line denotes a plain or double bond; R', R" and R"' each is linear or branched, satd. or unsatd. alkyl, alicyclic or aromatic hydrocarbyl or H; or 2 substituents together can form an aliphatic gp. while the other is a gp. as above) are prepd. by adding a carbonyl deriv. having formula (V) (where the dotted line denotes a double or triple bond and n is 0 or 1) to a dihydropyrazine having formula (III where R6 is H) in the presence of a basic agent. Pyrazines are used as aroma constituents in foods. The dihydropyrazine starting materials (III) and (IV) are easily prepd. by reacting an alkylene diamine with an alpha, beta-diketone. |
