abstract Hop or hop extracts are (a) treated to convert alpha-acids, or humulones, to the isomerised alpha-acids, pref. by intimately mixing with >=u divalent metal-derived metal oxide, suitable for food use, and kept under suitable conditions for converting at least part of alpha-acids to the isomerised alpha-acids. The prods. are then (b) contacted with a mono- or di-valent metal-derived metal hydride, suitable for food use and capable of chemical reducing the isomerised alpha-acidsf (c) kept under reaction conditions allowing hop- and alpha-acid stabilisation, and (d) opt. pelletised, simultaneously or subsequently. The humulones are stabilised against degradation by light and converted to desirable brewing ingredients. Conversion of alpha-acids to iso-alpha-acids is >=80%. 85% of iso-alpha-acids can be converted to the reduced iso-alpha-acids.
