abstract Yeasts are cultivated in a fermentation zone under aerobic conditions, at 20-50 degrees C in a nutritive medium at pH 2.5-4, pref. 3.5. The medium also contains an acid phosphate and a nitrogenous substance in the presence of oxygen. The nutrient medium is circulated continuously, by injecting 1-7 mm pref. 3 mm bubbles of oxygen tangentially at a point in the circuit. The biomass produces is passed without formation of a gaseous plug, and is freed from gas at the exterior of the fermentation zone. The mixt. of gas, liquid and solids remains in the fermentation zone for 0.2-1 hour pref. 0.6 hour. Biomass produced is separated and dried to isolate the protein product.
